As if food labelling was not already confusing enough for consumers a group of experts on nutrition has recently called into question the basis on which many of us, particularly those concerned about their weight, choose what to buy and eat.

Calorie counting has been the main measure for assessing a food’s impact on weight loss for more than 200 years.

A calorie is the energy people get from food and eating more calories than our bodies can process increases our weight.

However, some nutritionists have suggested recently that the calorie counts in the food we buy could be up to 25% inaccurate, because the food’s texture, fibre content and how it is cooked all affect the amount of energy we get from it.

We also have to consider how our bodies process the food we eat. For instance, the body has to work harder to digest protein and fibre.

One solution that has been suggested by a company that specialises in helping people to lose weight is a system based on a daily allowance, taking into account a person’s gender, age, weight and height.

Dietician Gaynor Bussell, of the British Diatetic Association, however, suggests that the most important thing is to eat healthily and that it is not a precise science to calculate this.

For some time nwo there has been disagreement about food labelling and the EU eventually earlier this year rejected the “traffic light” system that many consumers and food suppliers in the UK favour as being the easiest to understand.

Matters are now even more complicated since the UK’s new coalition government has shifted some of the responsibilities formerly carried out by the Food Standards Agency to Defra (Department for the Environment, Food and Rural Affairs). The FSA remains responsible for nutrition and food safety, while Defra takes over responsibility for labelling policy on issues other than these two.

So how are shoppers to make decisions especially when the weekly food shop is likely to be done under some time pressure?

More information is available on the FSA website – of particular interest is the regulation of labelling of GM (Genetically Modified) ingredients, which advises that products such as meat, milk and eggs from animals fed on GM animal feed don’t need labelling, nor do products produced with GM technology.

It also warns consumers to be careful of terms like “farmhouse” and “traditional”. For example, it advises that “farmhouse” should only be used when the product has been made in a house on a farm or in the main dwelling of the farmer.

If the main issue for consumers is choosing healthy foods it is possible that the work of the Biopesticides Developers may in the future give some grounds for confidence.

Few industries operate on as tight a margin as food manufacturing. The ability to develop accurate job cost data and production standards is make or break. According to John Rattray, Senior Executive with Memex Automation, “We suggest a low cost, single machine ‘Pilot’ system, so companies can experience real-time monitoring, reporting and analysis of production and performance OEE data from all manufacturing equipments.”

 

John Rattray recently discussed Overall Equipment Effectiveness (OEE) in a feature article by manufacturing journalist TR Cutler, titled “Overall Equipment Effectiveness in Food Production.”  The article appears in the current issue of the Food and Beverage Journal, published by FEP Executive Search.

Food Quality Assurance Managers are being instructed to prevent problems and require a real-time performance OEE (Overall Equipment Effectiveness) dashboard to view the plant. These data must capture metrics from each machine as well as run time, down time, cycle time, production rate. Other data needed include production and scrap counts and process (dwell, duration, inject, form, fill) time.

 

 

 

 

“C-Level Food Executives also want Food Plant Managers to develop accurate job cost data and production standards, compare actual results against standards to ensure accurate product costing. This information must be accurate and technology solutions must deliver data with the ability to analyze performance by shift, department, lot, product and machine,” insisted Rattray.

 

It is vital in food operations whether complying with HACCP (Hazard Analysis Critical Control Points) or ISO 22000 standards, that Operations Managers are able to view plant performance data in real-time, anywhere, anytime. The ability to select data functions to display is possible whether viewed on any PC on the company LAN/WAN or via the web. Tracking production in real-time to ensure goals are met and to minimize work-in-process are essential to optimize food safety and production. 

 

Memex identified the importance of eliminating unproductive labor and manual data recording errors within the food industry production process. Rattray said, “Food companies must be able to alert Managers to potential problems with real-time E-mail and the E-mails must be sent automatically when performance and OEE targets aren’t being met, or machine status or operation changes.”

 

Rattray went on to suggest that improved scheduling with visual job queue and an optional ERP link to schedule and track job progress in real-time on each food production machine was very helpful: “Food production efficiency is enhanced with the ability to download ERP production requirements to job queue and then upload production data at job and shift end. Companies are able to benchmark processes and track results continuously.”

These technologies support Lean Manufacturing, Continuous Improvement and Six Sigma initiatives with accurate measurement of defined metrics and key performance indicators. Using easy-to-understand graphical displays to track progress, inform and motivate operators are essential in the food sector given wide array of skill sets and knowledge levels.

Escape Velocity Systems (EVS) (www.evs-sw.com) recently announced that food manufacturing operations are increasingly focused on technology solutions that will help meet regulatory and compliance issues.

Beyond their concerns about pricing, which often eliminate SAP and other big-ticket vendors as an ERP solution, manufacturing clients are far more savvy and skeptical than they once were about the promises made by ERP vendors. Manufacturers know that ERP software is a great tool, not a business panacea. Burned at least once or twice previously, manufacturers replacing existing ERP systems have challenged ERP vendors to prove themselves. And for their part, whether it’s for simple self-preservation or a result of customer-driven demand, ERP vendors are proving they possess the industry-sector and manufacturing-process expertise to win new business.

The bottom line is that documentation of lot traceability is not an option — it’s now the law. According to Garber there are key lot traceability functions that are essential but are lacking in many of the ERP vendors claiming market segmentation competency. The following functions are critical:

Full tracking of raw material lots through manufacturing

Full tracking of finished-good lots through shipment to customer

Complete reporting on lot genealogy, showing all usage of lots in from vendor, through manufacturing job, and to end user

Ability to query end-user sales order and see all raw material and finished good lots used for specific shipment

Ability to query lot from vendor or manufacturing and see all end users to which lot is shipped

Ability to track lot properties with allowable “criteria” for each lot

There are other important functionalities that support food manufacturing audits and quality assurance but are not a direct response to the Bioterrorism Act. The depth of food manufacturing installations is also critical. Many ERP vendors, having secured one or two food manufacturing clients, suddenly claim expertise in the sector. This technique is a clever use of “packaging” and marketing; however, true lot-traceability solutions are just the beginning for truly committed vendors in this sector.
